1. Healthy 5-Ingredient Banana Blueberry Muffins
We’re kicking things off with banana blueberry muffins from The Big Man’s World. These require only five ingredients: bananas, blueberries, coconut flour, nut butter, and maple syrup. Make them on a Sunday to have breakfast all week. You won’t need to feel guilty about your daily muffin with these healthy baked goods in tow.
- 3 large overripe bananas
- ⅓ cup coconut flour, sifted
- ⅓ cup smooth nut butter of choice
- ⅓ cup pure maple syrup
- ¼ to ½ cup blueberries
Directions: Preheat the oven to 350 degrees Fahrenheit. Line your muffin tin with greased muffin cups.
Combine all the ingredients except for the blueberries in a large bowl and mix well to combine. Gently mix in the blueberries. Pour batter into the muffin cups, dividing evenly. Bake for 20 to 25 minutes.
Remove muffins from oven and allow to cool in muffin tray. Serve.
